Ingredients
- 1 Tablespoon olive oil
- 1 small onion, chopped
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp salt
- 2 Tbsp whole grain mustard, divided
- 1/4 tsp freshly ground pepper
- One Tablespoon red wine vinegar
- One Tablespoon white wine vinegar
- One Tablespoon apple cider vinegar
- 1 16oz can chopped tomatoes (or 16 oz of fresh tomatoes, in season, with juices)
- 3/4 cup Guinness Stout Beer

%20and%20include%20this%20Homemade%20Guinness%20Irish%20Stout%20Ketchup%20in%20the%20mix.%3C/p%3E%3Cp%3EIf%20you%20know%20me%20at%20all%20that%20might%20come%20as%20a%20surprise.%20I%E2%80%99m%20not%20a%20ketchup%20fan.%20I%20love%20tomatoes;%20just%20not%20ketchup.%20I%E2%80%99m%20that%20person%20at%20the%20fast%20food%20drive-thru%20who%20has%20to%20have%20her%20cheap,%20plain,%20single%20McDonald%E2%80%99s%20burger%20with%20double%20the%20pickles%20and%20hold%20the%20ketchup;%20girl%E2%80%99s%20got%20standards%20you%20know?%20So%20when%20a%20company%20asked%20me%20to%20review%20a%20ketchup%20product%20a%20few%20years%20ago%20I%20was%20curious%20but%20to%20be%20honest%20I%20didn%E2%80%99t%20hold%20out%20much%20hope%20that%20I%20would%20be%20impressed;%20it%20was%20after%20all%20just%20ketchup.%3C/p%3E%3Cp%3EI%20was%20pleasantly%20surprised.%20The%20nice%20people%20at%20Ballymaloe%20sent%20me%20a%20couple%20of%20samples.%20Their%20regular%20ketchup%20and%20one%20with%20stout.%20I%E2%80%99m%20not%20sure%20I%20had%20even%20discovered%20how%20much%20I%20loved%20Guinness%20at%20that%20point%20but%20I%20do%20remember%20this%E2%80%A6the%20regular%20ketchup%20was%20much%20better%20than%20the%20norm%20and%20I%20sure%20loved%20that%20the%20ingredients%20were%20natural%20and%20more%20varied%20than%20just%20tomatoes%20and%20high%20fructose%20corn%20syrup%20so%20we%20were%20off%20to%20a%20good%20start.%20Still,%20it%20was%20that%20stout%20version%20that%20woke%20me%20up.%20So%20good%20I%20could%20(was)%20eating%20it%20by%20the%20spoonful.%3C/p%3E%3Cp%3EFast%20forward%20a%20couple%20of%20years%20and%20I%20still%20love%20that%20ketchup%20but%20it%20is%20a%20royal%20pain%20to%20find.%20The%20only%20place%20I%E2%80%99ve%20found%20it%20locally%20is%20Cost%20Plus%20World%20Market%20and%20it%E2%80%99s%20seldom%20been%20on%20the%20shelves%20when%20I%E2%80%99ve%20gone%20in%20to%20shop.%20My%20last%20foray%20I%20left%20empty%20handed%20so%20once%20again%20I%20had%20to%20order%20online%20and%20in%20that%20moment,%20after%20I%20finished%20my%20order,%20I%20realized%20something%20had%20to%20be%20done.%20$5/bottle%20for%20only%208%20ounces%20and%20shipping%20on%20top%20of%20that?%20I%20always%20ordered%204%20bottles%20so%20I%20was%20paying%20$25%20every%20time%20I%20wanted%20my%20ketchup%20fix.%20Ouch.%3C/p%3E%3Cp%3EI%E2%80%99m%20not%20unhappy%20I%20placed%20that%20order%20though;%20it%20was%20good%20to%20have%20some%20on%20hand%20when%20I%20tried%20to%20recreate%20it.%20While%20the%20bottle%20does%20list%20ingredients%20that%E2%80%99s%20really%20not%20much%20help%20since%20there%20are%20no%20quantities%20which%20can%20mean%20a%20lot%20of%20trial%20and%20error.%20Beyond%20that?%20What%20the%20heck%20is%20stout%20extract?%20I%20had%20the%20real%20deal%20so%20I%20was%20going%20to%20have%20to%20improvise.%3C/p%3E%3Cp%3ELuckily%20the%20story%20of%20Ballymaloe%20is%20not%20unknown.%20Ballymaloe%20is%20nestled%20in%20the%20southeastern%20part%20of%20Ireland%20in%20a%2015th%20century%20Norman%20Castle%20and%20the%20Ballymaloe%20Country%20House%20Hotel%20was%20opened%20by%20Mrytle%20Allen%20in%201964%20and%20continues%20to%20be%20run%20by%20Mrytle%E2%80%99s%20daughter%20Yasmin%20as%20%20the%20Ballylamoe%20House%20and%20Cookery%20School%20where%20guests%20are%20still%20welcome%20and%20their%20products%20are%20produced.%20I%20decided%20to%20dig%20a%20bit%20deeper%20and%20see%20if%20I%20could%20find%20additional%20information%20on%20this%20ketchup%20before%20starting%20in%20the%20kitchen%20and%20I%20struck%20gold.%3C/p%3E%3Cp%3EMyrtle%20Allen%20produced%20a%20cookbook%20in%201981%20called%20The%20Ballylamoe%20Cookbook%20which%20included%20a%20tomato/sultana%20chutney%20that%20many%20thought%20to%20be%20the%20basis%20for%20their%20Ballymaloe%20Irish%20Ketchup.%20I%20discovered%20that%20recipe%20in%20a%20chatroom%20discussion%20from%20years%20ago%20and%20decided%20to%20use%20it%20as%20a%20start%20for%20my%20foray%20into%20replicating%20this%20Irish%20gold.%20I%E2%80%99ve%20made%20a%20couple%20of%20revisions;%20Myrtle%E2%80%99s%20recipe%20for%20a%20chutney%20called%20for%20green%20onions%20and%20I%20thought%20regular%20ones%20would%20do.%20I%20also%20thought%20it%20just%20a%20bit%20too%20sweet%20so%20I%20added%20additional%20whole%20grain%20mustard%20and%20some%20cider%20apple%20vinegar.%20Still%E2%80%A6most%20important%20of%20all%20was%20the%20addition%20of%20the%20Guinness%20Stout.%20That%E2%80%99s%20when%20it%20turned%20the%20corner.%20Does%20it%20taste%20like%20the%20bottled%20version?%20It%E2%80%99s%20very%20similar.%20Was%20I%20happy%20with%20the%20results?%20I%20think%20I%20like%20it%20better%20so%20yes%20I%20am%20REALLY%20happy.%3C/p%3E%3Cp%3EI%20am%20hooked%20and%20hope%20you%20will%20try%20it.%20It%E2%80%99s%20not%20a%20product%20that%20I%E2%80%99m%20canning%20for%20longevity%20but%20I%E2%80%99m%20betting%20once%20you%20taste%20it%20you%E2%80%99ll%20agree%20there%20is%20no%20need;%20it%20will%20vanish%20quickly.%20My%20leftover%20cold%20hamburger%20today%20was%20sure%20fantastic!%20Check%20out%20my%20post%20tomorrow%20for%20the%20recipe%20for%20the%20burger%20that%20started%20this%20whole%20thing%20years%20ago.%20Seriously%20one%20of%20the%20best%20I%E2%80%99ve%20ever%20had!%3C/p%3E%3Cp%3EHomemade%20Irish%20Stout%20Ketchup%3C/p%3E%3Cp%3ESave%20Recipe%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20heat%20the%20olive%20oil%20and%20add%20the%20chopped%20onions%20and%20saute%20them%20until%20they%20soften%20and%20become%20translucent.%3C/p%3E%3Cp%3EAdd%20the%20remainder%20of%20the%20ingredients;%20setting%20aside%201%20Tablespoon%20of%20the%20whole%20grain%20mustard,%20and%20bring%20to%20a%20boil;%20simmer%20for%20about%20an%20hour%20until%20thickened%20to%20a%20jam%20consistency;%20longer%20if%20necessary.%20Either%20use%20an%20immersion%20or%20countertop%20blender%20and%20blend%20until%20just%20slightly%20chunky%20and%20thick.%3C/p%3E%3Cp%3EAdd%20the%20additional%20tablespoon%20of%20whole%20grain%20mustard%20and%20simmer%20for%205%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20allow%20to%20cool%20before%20pouring%20into%20a%20container.%3C/p%3E%3Cp%3ERefrigerate.%20Use%20within%20a%20couple%20of%20weeks.%3C/p%3E%3Cp%3E6.1%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/homemade-guinness-irish-stout-ketchup/%3C/p%3E){kind=link}
