Ingredients
- 1¾ cups all-purpose flour
- ½ cup granulated sugar
- ¼ teaspoon salt
- 12 tablespoons unsalted butter, cut into small pieces and chilled
- 2 egg yolks, lightly beaten
- 1 teaspoon vanilla extract
- For the Filling:
- ⅓ cup strawberry jam (or your favorite flavor)
- 9 ounces cream cheese, at room temperature
- 8 ounces (1 cup) cottage cheese, at room temperature
- ¾ cup granulated sugar
- ¼ teaspoon salt
- Pinch of ground cinnamon
- Pinch of ground nutmeg
- 2 eggs, at room temperature

%20when%20I%20belonged%20to%20the%20group%20Tuesdays%20with%20Dorie;%20a%20small%20group%20of%20bloggers%20that%20baked%20one%20recipe%20a%20week%20from%20Dorie%20Greenspan%E2%80%99s%20Baking:%20From%20My%20Home%20to%20Yours.%20I%20had%20received%20that%20cookbook%20for%20Christmas%20just%20a%20few%20weeks%20prior%20and%20instantly%20fell%20in%20love%20with%20the%20lovely,%20conversational%20tone%20that%20each%20recipe%20and%20headnote%20was%20written%20in.%20I%E2%80%99ve%20baked%20countless%20recipes%20from%20that%20book,%20and%20this%20recipe%20remains%20one%20of%20my%20top%20three%20favorites%20%E2%80%93%20a%20shortbread%20crust%20is%20topped%20with%20strawberry%20jam%20and%20a%20silky%20smooth%20cheesecake%20layer.%20Divine!%3C/p%3E%3Cp%3EThere%E2%80%99s%20a%20sneaky%20little%20ingredient%20in%20this%20recipe%20that%20surprised%20me%20and%20made%20me%20a%20little%20suspicious%20%E2%80%93%20cottage%20cheese!%3C/p%3E%3Cp%3EI%20had%20never%20made%20a%20cheesecake%20previous%20to%20this%20one,%20or%20since,%20that%20used%20cottage%20cheese.%20Since%20you%20use%20a%20food%20processor%20to%20make%20the%20filling,%20the%20texture%20is%20silky%20smooth%20and%20you%20really%20have%20no%20idea%20that%20anything%20other%20than%20cream%20cheese%20is%20in%20there.%3C/p%3E%3Cp%3EI%20made%20this%20for%20dessert%20last%20Sunday%20since%20no%20one%20else%20other%20than%20me%20had%20tasted%20it%20before,%20and%20I%20realized%20that%20it%20had%20been%20far%20too%20long%20since%20it%20graced%20my%20kitchen.%3C/p%3E%3Cp%3EEveryone%20fawned%20over%20it%20and%20the%20majority%20went%20back%20for%20seconds.%20My%20husband%20said%20that%20it%20was%20the%20best%20dessert%20I%E2%80%99d%20made%20recently,%20along%20with%20the%20chocolate%20bread%20pudding.%20A%20few%20people%20specifically%20mentioned%20the%20flavor%20and%20texture%20of%20the%20cheesecake%20layer%20and%20how%20amazing%20it%20tasted;%20they%20couldn%E2%80%99t%20believe%20it%20when%20I%20told%20them%20what%20the%20%E2%80%9Csecret%E2%80%9D%20ingredient%20was!%3C/p%3E%3Cp%3EIf%20you%20love%20cheesecake,%20make%20an%20excuse%20to%20get%20this%20into%20the%20oven%20as%20soon%20as%20possible!%3C/p%3E%3Cp%3EFour%20years%20ago:%20Focaccia%20Bread%3C/p%3E%3Cp%3EHidden%20Berry%20Cream%20Cheese%20Torte%3C/p%3E%3Cp%3EYield:%208%20to%2010%20servings%3C/p%3E%3Cp%3EPrep%20Time:%201%20hour%3C/p%3E%3Cp%3ECook%20Time:%2090%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%202%20hours%2030%20minutes%3C/p%3E%3Cp%3EThis%20luscious%20cream%20cheese%20torte%20sits%20on%20a%20shortbread%20crust%20and%20a%20hidden%20layer%20of%20strawberry%20jam.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20Crust:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Butter%20a%209-inch%20springform%20pan,%20dust%20the%20inside%20with%20flour%20and%20tap%20out%20the%20excess.%20Place%20on%20a%20baking%20sheet%20lined%20with%20parchment%20or%20a%20silicone%20mat.%3C/p%3E%3Cp%3E2.%20Make%20the%20Crust:%20Put%20the%20flour,%20sugar%20and%20salt%20in%20a%20food%20processor%20and%20pulse%20just%20to%20blend.%20Add%20the%20pieces%20of%20butter%20and%20pulse%20until%20the%20mixture%20resembles%20coarse%20meal.%20Add%20the%20egg%20yolks%20and%20vanilla%20and%20continue%20to%20pulse%20until%20the%20dough%20comes%20together%20in%20clumps%20and%20curds%20-%20don't%20allow%20the%20dough%20to%20form%20a%20ball.%3C/p%3E%3Cp%3E3.%20Turn%20the%20dough%20out%20into%20the%20pan%20and%20press%20an%20even%20layer%20over%20the%20bottom%20and%20about%201%C2%BD%20inches%20up%20the%20sides%20of%20the%20pan.%20Refrigerate%20for%20at%20least%2030%20minutes.%3C/p%3E%3Cp%3E4.%20Preheat%20oven%20to%20375%20degrees%20F.%3C/p%3E%3Cp%3E5.%20Fit%20a%20piece%20of%20buttered%20aluminum%20foil%20against%20the%20crust,%20covering%20it%20completely.%20Fill%20the%20crust%20with%20rice,%20dried%20beans%20or%20pie%20weights%20and%20slide%20the%20sheet%20into%20the%20oven.%20Bake%20the%20crust%20for%2020%20minutes,%20then%20remove%20the%20foil%20and%20weights%20and%20bake%20for%20an%20additional%205%20minutes.%20Transfer%20to%20a%20rack%20to%20cool%20while%20you%20make%20the%20filling.%3C/p%3E%3Cp%3E6.%20Reduce%20the%20oven%20temperature%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3E7.%20Make%20the%20Filling:%20Stir%20the%20jam%20so%20that%20it's%20completely%20smooth,%20and%20spread%20it%20over%20the%20bottom%20of%20the%20crust%20(you%20can%20do%20this%20while%20the%20crust%20is%20still%20warm).%3C/p%3E%3Cp%3E8.%20Put%20the%20cream%20cheese%20and%20cottage%20cheese%20into%20the%20food%20processor%20and%20process,%20scraping%20down%20the%20sides%20of%20the%20bowl%20a%20few%20times,%20for%202%20minutes,%20until%20the%20mixture%20is%20smooth%20and%20satiny.%20Add%20the%20sugar,%20salt%20and%20spices%20and%20process%20for%20another%2030%20seconds.%20With%20the%20machine%20running,%20add%20the%20eggs%20and%20process,%20scraping%20the%20bowl%20as%20needed,%20for%20an%20additional%20minute.%20Pour%20the%20filling%20over%20the%20jam.%3C/p%3E%3Cp%3E9.%20Bake%20for%2060%20to%2070%20minutes,%20or%20until%20the%20filling%20is%20uniformly%20puffed%20and%20no%20longer%20jiggly.%20Gently%20transfer%20the%20springform%20pan%20to%20a%20cooling%20rack%20and%20allow%20the%20torte%20to%20cool%20to%20room%20temperature,%20during%20which%20time%20the%20filling%20will%20collapse.%3C/p%3E%3Cp%3E10.%20Run%20a%20knife%20between%20the%20crust%20and%20the%20sides%20of%20the%20pan,%20then%20remove%20the%20sides%20of%20the%20springform.%20Chill%20the%20torte%20for%20at%20least%20four%20hours%20before%20serving.%20Leftovers%20should%20be%20stored,%20covered,%20in%20the%20refrigerator%20for%20up%20to%20five%20days.%3C/p%3E%3Cp%3EThis%20recipe%20was%20originally%20published%20on%20January%2015,%202008.%3C/p%3E){kind=link}
