Herbed Stuffed Mushrooms

Ingredients

  • 16 x mushrooms
  • 2 Tbsp. butter
  • 1 x onions, medium
  • 1 tsp garlic, crushed
  • 1 c. sausage mince
  • 1/2 c. fresh herbs, minced salt, pepper
  • 1 c. fresh breadcrumbs

Directions

  1. Wash mushrooms and pat dry.
  2. Remove the stems from the mushrooms and chop stems fine. Brush inside of mushroom tops with melted butter.
  3. Finely dice onions.
  4. Heat 1/2 the butter in a pan, add in onion and garlic, cook 2 min without colour. Add in mushrooms and cook a further 2-3 min. Remove from heat.
  5. Mix mushrooms and herbs into sausage mince and season well.
  6. Pipe or possibly spoon sausage mix into mushrooms, then dip sausage top into breadcrumbs. Arrange in a well buttered shallow roasting tray.
  7. Dot tops with butter and cook in a moderate oven 180C/350F till cooked through, about 10 min.
