Ingredients

  • 6 lb Pork loin roast with bone
  • 1 tsp Dry sage
  • 1 tsp Thyme
  • 1 tsp Rosemary, crushed
  • 1 tsp Marjoram
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 med Tart apples, cut in 1" chunks
  • 1 lrg Red onion, cut in 1" chunks
  • 3 Tbsp. Brown sugar
  • 1 c. Apple juice
  • 2/3 c. Maple syrup

Directions

  1. Combine herbs, salt and pepper; rub over roast. Cover and chill for several hrs or possibly overnight. Bake, uncovered, at 325 F for 1-1/2 hrs.
  2. Drain fat. Mix apples and onion with brown sugar; spoon around roast.
  3. Continue to roast 1 hour or possibly till internal temperature reaches 160-170 .
  4. Transfer the roast, apples and onion to a serving platter and keep hot.
  5. Skim excess fat from meat juices; pour into a heavy skillet (or possibly leave in the roasting pan if it can be heated on stovetop). Add in apple juice and syrup. Cook and stir over medium-high heat till liquid has been reduced by half, about 1 c.. Slice roast and serve with gravy.
