Herbed Corn Pudding

Ingredients

  • 4 tbsp. butter, melted
  • 1/2 c. chopped onion
  • 1 (12 ounce.) can whole kernel yellow corn
  • 1 (17 ounce.) can cream style yellow corn
  • 1/4 c. minced pimiento (opt.)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 1/2 c. packaged herb flavored stuffing mix (not crouton type)
  • Chopped parsley for garnish

Directions

  1. Heat butter in skillet and remove 2 Tbsp. to small bowl. Saute/fry onion in skillet till golden brown; add in corn, pimiento, salt and pepper and combine. Pour into ungreased shallow baking dish. Stir stuffing mix with the reserved melted butter and sprinkle proportionately over the corn. With back of spoon, lightly press down into corn, about 1/4". Bake in 350 degree oven for about 20 min till browned and bubbly. Sprinkle with parsley.
