Ingredients

  • 1 1/2 c. Guinness stout
  • 1 1/2 c. chicken stock
  • 2 sprg thyme
  • 1 tsp Worcestershire sauce
  • 1/2 tsp milled peppercorns
  • 1 x bay leaf
  • 1/4 lb unsalted butter, cut in 4 pcs
  • 4 x (10-oz) trimmed sirloin steaks Grnd black pepper to taste
  • 2 lrg cooked (boiled) potatoes, peeled and sliced lengthwise
  • 1 x clove garlic, crushed
  • 1 tsp extra virgin olive oil
  • 1 Tbsp. minced chives
  • 4 x plum tomatoes, peeled, seeded, and cut in chunks
  • 1 tsp pepper

Directions

  1. For marinade: Combine all ingredients except butter in a deep dish. Immerse trimmed steaks in marinade and chill for 8 hrs.
  2. Pour marinade into a saucepan and bring to a boil, skimming off foam which rises to the surface. Reduce marinade by half.
  3. Remove from heat. Strain through fine mesh strainer. When slightly cooled, whisk in butter, 1 piece at a time, till it is totally incorporated into sauce.
  4. For steak: Grill steaks to desired doneness.
  5. For chived potato and tomato: Rub potatoes with garlic, oil, salt and grnd peppercorns. Lay flat on a sheet pan. Place potatoes on grill and grill on both sides till golden. In a large serving platter, overlap potatoes into a circle. Place tomato chunks on top of potatoes and sprinkle with minced chives.
  6. To serve: Lay sirloin steaks to one side of the chived potato and tomatoes.
  7. Pour sauce around steaks.
