Ingredients

  • 1 bn scallions, minced
  • 1 lb Brie cheese, room temperature
  • 8 x veal loin chops, (8-oz) Extra virgin olive oil Salt and freshly grnd black pepper, to taste

Directions

  1. In a medium-sized bowl, combine the scallions and cheese and mash into a soft paste. Cut a pocket in the side of each chop, making a slit to the bone. Fill each chop with the scallion paste.
  2. Preheat the grill or possibly broiler. Brush each chop with the oil and season with the salt and black pepper. Cook the chops for about 3 min on each side. (Veal chops should remain slightly pink in the center.) Serve immediately.
  3. YIELD: 8 SERVINGS
