Grilled Romaine Salad With Spicy Caesar Dressing

Ingredients

  • 1 Tbsp. Prepared mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Freshly-grnd black pepper
  • 1 tsp Pureed canned chipotles
  • 1 tsp Worcestershire sauce Few drops of warm pepper sauce
  • 1 Tbsp. Fresh lime juice
  • 1 tsp Capers
  • 5 x Anchovy fillets
  • 8 x Garlic cloves
  • 1 c. Extra virgin olive oil
  • 2 Tbsp. Red wine vinegar Salt to taste Freshly-grnd black pepper to taste
  • 24 x Romaine leaves
  • 3 Tbsp. Extra virgin olive oil
  • 1 piece Parmesan cheese - (abt 2 ounce) shaved Grilled croutons

Directions

  1. Put all ingredients, except the oil and vinegar, in a food processor and process till blended. Slowly fold in the oil, then fold in the vinegar. If too thick, add in a little water.
  2. Brush the leaves of romaine on both sides with the extra virgin olive oil and season lightly with salt and pepper. Grill on each side for 30 seconds. Place 6 leaves on each plate, drizzle with the dressing and garnish with shaved cheese and croutons.
  3. This recipe yields 4 servings.
