  • 4 x ripe plantains peeled, and bias-sliced 1/2" thick
  • 2 Tbsp. Vegetable oil
  • 4 Tbsp. Light brown sugar
  • 2 Tbsp. Fresh orange juice
  • 1 Tbsp. Honey
  • 2 Tbsp. Coarsely minced cilantro Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Preheat grill.
  2. Brush the plantains with the oil and grill till caramelized, about 2 min on each side. In a small bowl, combine the brown sugar, orange juice, honey and cilantro and brush on plantains. Season to taste with salt and pepper.
  3. This recipe yields 4 servings.
