Ingredients

  • 5 lb grnd beef
  • 1 c. rice
  • 4 x egg
  • 1/4 c. extra virgin olive oil
  • 1 x lemon
  • 2 x onion
  • 1 x batch fresh dill
  • 1 x batch fresh Italian parsley
  • 1 x salt and pepper, to taste
  • 1 x touch extra virgin olive oil Egg Lemon Sauce
  • 2 lt lowfat milk
  • 5 x egg yolk
  • 2 x fresh lemon
  • 1/8 tsp salt
  • 1/8 tsp extra virgin olive oil
  • 2 tsp cornstarch Roasted Leg of Lamb
  • 8 lb female leg of lamb
  • 2 x fresh lemon
  • 2 tsp extra virgin olive oil
  • 3 x garlic, fresh
  • 1 x salt and pepper, to taste oregano, to taste Lemon Roasted Potatoes white potato, halved
  • 2 x fresh lemon
  • 1 x salt and pepper
  • 2 tsp extra virgin olive oil
  • 1 x garlic

Directions

  1. Combine the ingredients together uncooked in a large bowl.
  2. Wrap the fold in a fresh grape leaf.
  3. Place the stuffed grape leaves into a large steaming pot and let steam for 2 1/2 to 3 hrs.
  4. Egg Lemon Sauce:Place lowfat milk in a pot and bring to a gentle boil.
  5. Beat together the egg yolks, lemon juice, salt, extra virgin olive oil, and cornstarch.
  6. Add in the freshly beaten ingredients to the boiling lowfat milk, and mix till creamy.
  7. Pour over Dalmades and serve.
  8. Roasted Leg of Lamb:Slide a knife into the leg of lamb in four different areas.
  9. Place a full clove of garlic in each slit.
  10. Marinade the leg of lamb overnight in the mix of lemon juice, extra virgin olive oil, salt, pepper, and oregano.
  11. Before roasting, sub salt, pepper, and oregano over the leg again.
  12. Let roast for 1 hour and 45 min, covered. and for another 45 min uncovered basting ever 15 min till golden and crispy.
  13. Lemon Roasted Potatoes:Cover the potatoes in fresh lemon juice, oregano, salt, pepper, extra virgin olive oil, and garlic.
  14. Let it roast for 1 1/2 hrs.
