Ingredients

  • 5 lb Potato
  • 6 clv garlic, peeled
  • 1 c. Heavy cream
  • 1 stk Butter, unsalted
  • 6 ounce Feta cheese
  • 1/4 c. Chives, fresh, minced finely
  • 1 x salt and pepper to taste

Directions

  1. Peel and cube the potatoes. Combine potatoes and garlic with sufficient salted cool water to cover. Simmer till tender, drain and mash.
  2. While the potatoes are cooking hot the cream and butter, add in to the mashed potatoes along with the Feta and chives, stir to combine. Salt and pepper to taste.Serves eight.
