Greek Dressing For Thanksgiving

Ingredients

  • 1 pound chicken giblets
  • 2 lbs. hamburger or possibly sausage
  • 1/2 pound butter
  • Salt and pepper to taste
  • 3 onions, minced fine
  • 2 c. diced celery
  • 2 lg. apples, diced
  • 1/2 c. parsley, minced fine
  • 1 teaspoon cinnamon
  • 2 teaspoon grnd cumin
  • 2 c. raisins
  • Pine nuts
  • 1 pound cleaned chestnuts
  • Cashew nuts, if you like
  • 2 quart. chicken broth
  • 1 1/2 c. rice

Directions

  1. Saute/fry giblets with butter, meat and minced onions, celery, apple, parsley, salt and pepper, cinnamon and cumin. Let cook a while. Add in chicken broth. Add in raisins, pine nuts, chestnuts and cashews. Add in 1 1/2 c. rice (or possibly according how much you wish to make). Cook till rice is done. You may need to add in more broth or possibly water as it cooks, taking care not to scorch. Serve with chicken or possibly turkey.
