Ingredients

  • 1/4 c. butter
  • 1/4 c. onion, chopped
  • 2 leeks, thinly sliced
  • 2 c. chicken stock
  • 3 carrots, sliced
  • 1 heart of celery, diced
  • 1/2 pound haddock, cubed
  • 3 c. lowfat milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon bay leaves, crumbled
  • 1/2 teaspoon thyme
  • 1 c. crabmeat, flaked
  • 1 (7 1/2 ounce.) can clams with liquid

Directions

  1. In a large pot, heat butter. Add in onion and leeks. Saute/fry till limp and translucent/soft. Add in chicken stock, celery, carrots and haddock together with seasonings. Cover and simmer for about 30 min. Add in the crabmeat, clams with liquid, lowfat milk and light cream. Heat to boiling and serve with crusty rolls.
