Ingredients

  • 6 ounce garlic-flavored croutons
  • 1/2 tsp grnd black pepper
  • 1/2 tsp cayenne pepper
  • 1 tsp chili pwdr
  • 1 tsp dry thyme
  • 1/2 x onion, roughly minced
  • 1 x carrot, peeled and broken
  • 3 whl clv garlic
  • 1/2 x red bell pepper
  • 18 ounce grnd chuck
  • 18 ounce grnd sirloin
  • 1 1/2 tsp kosher salt
  • 1 x egg
  • 1/2 c. catsup
  • 1 Tbsp. grnd cumin
  • 1 dsh Worcestershire sauce
  • 1 dsh warm pepper sauce
  • 1 Tbsp. honey

Directions

  1. Heat oven to 325 degrees F. In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili pwdr, and thyme. Pulse till the mix is of a fine texture. Place this mix into a large bowl.
  2. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse till the mix is finely minced, but not pureed. Combine the vegetable mix, grnd sirloin, and grnd chuck with the bread crumb mix. Season the meat mix with the kosher salt. Add in the egg and combine thoroughly, but avoid squeezing the meat. Pack this mix into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees. Combine the catsup, cumin, Worcestershire sauce, warm pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 min.
