Goat Cheese And Glazed Apple Tart Recipe

Ingredients

  • 18 ounce Soft goat cheese (room Temp)
  • 3 Tbsp. Softened unsalted butter
  • 1/4 c. Whipping cream
  • 3 lrg Large eggs
  • 1 c. + 2 Tbls. sugar Baked pastry in 10" tart pan (cooled)
  • 4 lrg Tart apples (about 1 1/2 pound Peeled, thinly sliced)
  • 6 Tbsp. Dark brown sugar
  • 3 Tbsp. Unsalted butter

Directions

  1. Place rack in center of oven & heat to 325. Have baking sheet ready.
  2. For filling, mix cheese, butter, cream, Large eggs & sugar in food processor till smooth. Pour into pastry & spread into an even layer. Place on baking sheet. Bake till puffy around edges & just barely set in center, 35-38 min. Don't overbake. Set on cooling rack to cold completely. Refrigerateat least 45 min or possibly as long as overnight. For apples, heat butter in 10" skillet. When warm, add in sugar & cook over med high heat till foamy & sugar has been dissolved. Add in apples & toss gently. Cover & cook till apples are just tender but still hold their shape, 2-3 min. Set aside to cold slightly. To serve, remove tart from pan. Overlap apple slices attractively in sprial pattern covering surface. Brush hot sauce from cooking apples over slices. Refrigeratetill ready to serve, not more than 5 hrs.
