Ingredients
- 2 cups fine ground white cornmeal
- 1 cup gluten free all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon fine sea salt
- 3 tablespoons molasses
- 2 large eggs
- 1 3/4 cups coconut milk
- 1/3 cup dairy free buttery spread, melted (divided)
- 1 1/2 cups cooked corn

%20in%20your%20recipe.%20They%E2%80%99re%20sold%20side%20by%20side%20in%20the%20baking%20section%20and%20it%E2%80%99s%20easy%20to%20grab%20the%20wrong%20one%20accidentally.%20I%20chose%20a%20fine%20ground%20white%20cornmeal.%20Not%20to%20worry,%20once%20it%20was%20combined%20with%20the%20eggs%20and%20other%20wet%20ingredients,%20it%20looked%20yellow.%20However,%20the%20addition%20of%20molasses%20does%20make%20this%20cornbread%20more%20brown%20than%20yellow%20once%20baked.%3C/p%3E%3Cp%3EAlso,%20traditional%20cornbread%20uses%20buttermilk.%20Love%20the%20taste,%20but%20my%20tummy%20can%E2%80%99t%20handle%20the%20dairy.%20So%20I%20was%20going%20to%20make%20this%20recipe%20dairy%20free%20as%20well%20by%20using%20coconut%20milk%20and%20a%20buttery%20spread%20instead%20of%20real%20butter.%3C/p%3E%3Cp%3ETo%20make%20my%20cornbread%20fun,%20I%20wanted%20to%20serve%20it%20in%20an%208%E2%80%9D%20cast%20iron%20skillet,%20using%20a%20method%20I%20read%20in%20an%20old%20%20Justin%20Wilson%20cookbook%20and%20saw%20in%20an%20episode%20of%20Damaris%20Phillips%E2%80%99s%20Food%20Network%20show,%20Southern%20at%20Heart.%20You%20heat%20the%20empty%20cast%20iron%20skillet%20in%20the%20oven.%20Then%20you%20take%20it%20out,%20add%20melted%20butter%20(in%20this%20case%20a%20buttery%20spread),%20and%20then%20the%20batter.%20The%20heat%20causes%20the%20batter%20to%20puff%20up%20and%20create%20a%20crispy%20crust%20when%20the%20cornbread%20is%20put%20back%20in%20the%20oven%20to%20be%20baked.%3C/p%3E%3Cp%3EFinally,%20I%20wanted%20to%20use%20whole%20pieces%20of%20corn%20in%20it%20straight%20from%20my%20%20Sunshine%20Sweet%20Corn%20from%20Florida.%20I%20love%20cornbread%20with%20pieces%20of%20corn%20in%20it.%20It%20seems%20more%20rustic%20and%20homey,%20don%E2%80%99t%20you%20think?%20Plus,%20when%20you%20take%20pieces%20of%20leftover%20cornbread,%20add%20coconut%20milk%20and%20a%20little%20stevia%20to%20it%20the%20next%20morning,%20and%20heat%20it%20up%20to%20make%20a%20breakfast%20mush,%20the%20corn%20kernels%20are%20even%20more%20delicious!%3C/p%3E%3Cp%3EUse%20this%20corn%20shucking%20hack!%3C/p%3E%3Cp%3EUsually,%20I%20shuck%20the%20corn%20outside%20by%20the%20compost%20pile%20because%20I%20hate%20the%20silk%20sticking%20to%20trash%20can%20and%20falling%20all%20over%20the%20kitchen%20floor.%20Then%20I%20cook%20the%20corn%20by%20steaming%20it%20over%20boiling%20water%20in%20a%20big%20pot%20on%20the%20stovetop.%3C/p%3E%3Cp%3EHowever,%20I%20had%20seen%20this%20corn%20shucking%20video%20on%20YouTube%20and%20thought%20it%20was%20too%20good%20to%20be%20true.%20There%20was%20no%20way%20you%20could%20cook%20an%20ear%20of%20corn%20in%20the%20microwave%20for%20four%20minutes,%20cut%20off%20the%20stem%20end,%20grab%20it%20by%20the%20silk%20end,%20and%20have%20the%20corn%20magically%20slide%20out%20of%20the%20husks.%20So%20I%20gave%20the%20corn%20in%20the%20microwave%20hack%20a%20try:%3C/p%3E%3Cp%3EThe%20corn%20slides%20out%20best%20when%20it%E2%80%99s%20hot,%20so%20use%20an%20oven%20mitt%20or%20paper%20towels%20to%20grip%20the%20corn%20to%20you%20don%E2%80%99t%20burn%20your%20hand!%3C/p%3E%3Cp%3ELearn%20the%20microwave%20corn%20shucking%20hack%20at%20This%20Mama%20Cooks!%20On%20a%20Diet.%20You'll%20never%20go%20back%20to%20cooking%20your%20corn%20on%20the%20cob%20on%20the%20grill%20or%20stove%20top%20again!%3C/p%3E%3Cp%3EThe%20beauty%20of%20this%20method%20is%20that%20you%20don%E2%80%99t%20have%20to%20heat%20up%20the%20grill%20or%20boil%20a%20pot%20of%20water%20to%20cook%20up%20your%20corn.%20If%20you%20have%20a%20lot%20of%20corn%20to%20cook,%20you%E2%80%99ll%20have%20to%20experiment%20on%20how%20much%20time%20in%20the%20microwave%20you%E2%80%99ll%20need%20to%20cook%20more%20than%20one%20ear%20at%20a%20time.%20(You%20can%20always%20cook%20up%20two%20or%20three%20ears%20and%20then%20test%20one%20by%20peeling%20back%20the%20husks%20to%20see%20if%20it%E2%80%99s%20done.)%3C/p%3E%3Cp%3ECorn%20husking%20pictures%20by%20Lucie%20Nichols.%3C/p%3E%3Cp%3EWin%20a%20$100%20Williams-Sonoma%20Grill%20Set%20from%20Sunshine%20Sweet%20Corn%20from%20Florida!%3C/p%3E%3Cp%3EInfluence%20Central%20and%20Sunshine%20Sweet%20Corn%20from%20Florida%20are%20giving%20away%20five%20$100%20Williams%20-Sonoma%20Grill%20Sets%20(one%20set%20each%20to%20five%20lucky%20winners)!%3C/p%3E%3Cp%3EThe%20contest%20goes%20until%20May%2022,%202015%3C/p%3E%3Cp%3EYou%20can%20enter%20by%20choosing%20one%20or%20more%20of%20the%20options%20below!%3C/p%3E%3Cp%3EGood%20luck!%3C/p%3E%3Cp%3ESunshine%20Sweet%20%23HuskYeah%20Campaign%3C/p%3E%3Cp%3EGluten%20Free%20Skillet%20Cornbread%20Sweetened%20with%20Molasses%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPlace%208-inch%20cast%20iron%20skillet%20in%20center%20rack%20of%20oven.%20Preheat%20oven%20to%20425%20degrees%20F.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20cornmeal,%20gluten%20free%20flour,%20baking%20powder,%20baking%20soda,%20and%20salt.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20mo
