  • 1 1/4 cup basmati (or other long-grain) rice
  • 1 3/4 cup water
  • 2 tablespoons peanut or vegetable oil
  • 2 tablespoons peeled and grated fresh ginger
  • 3 green onions, chopped
  • 1/2 pound fresh snowpeas
  • 1 carrot, peeled and julienned
  • salt to taste
  • 1 teaspoon toasted sesame oil
  • 1 cup diced fresh pineapple
  • 1/2 cup cashew nuts
