Ingredients

  • 1 3/4 c. flour, plain
  • 1 c. sugar (caster)
  • 125 gm ginger, glace
  • 185 gm butter
  • 1 x Large eggs
  • 2 Tbsp. lemon juice
  • 2/3 c. almonds, flaked

Directions

  1. Chop ginger.
  2. Sift flour and sugar into a bowl, fold in ginger, butter, egg and lemon juice. Press mix proportionately over base of well greased 16cm X 26cm lamington tin, press almonds on top.
  3. Bake in moderate oven for about 40 min or possibly till golden. Allow to cold in tin and cut into bars when cool.
  4. Serve with afternoon tea.
