German Chocolate Cream Cheese Frosting Recipe

  1. Place the chocolate in a small glass bowl in the microwave oven and heat on high power for 1 1/2 min. Stir till all the chocolate has melted, and set the bowl aside.
  2. Place the cream cheese in a large mixing bowl. Blend with an electric mixer on low speed till well-combined, 30 seconds. Stop the machine. Add in the melted chocolate and blend with the mixer on low speed till the chocolate is incorporated, 30 seconds. Add in the lowfat milk, vanilla and 3 1/2 c. of the confectioners' sugar and blend on low speed till the sugar is incorporated, 30 seconds. Add in more sugar as needed to make the frosting spreadable. Increase the mixer speed to medium and blend till the frosting is fluffy, 1 minute more.
  3. Use to frost the top and sides of the cake. Sprinkle the cake with coconut.
