German Cheesecake (Kase Kuchen)

Ingredients

  • 20 x Vanilla wafers, or possibly ginger snaps
  • 2 Tbsp. Sugar
  • 1/2 tsp Cinnamon
  • 1/4 c. Butter
  • 3 pkt (8 ounce) cream cheese, soft
  • 1 1/4 c. Sugar
  • 6 lrg Large eggs
  • 1 pt Lowfat sour cream
  • 3 Tbsp. All-purpose flour
  • 2 tsp Vanilla
  • 1 Tbsp. Lemon juice

Directions

  1. Preheat oven 325-F. Process with the steel chopping blade the crumbs, sugar, cinnamon and melted butter. Press lightly into 10-inch springform pan. Bake crust 3-5 min. Set aside.
  2. Microwave the cream cheese 3-4 min on half-power to soften if needed.
  3. Beat till smooth. Add in sugar and Large eggs; beat well. Add in lowfat sour cream, flour, vanilla, and lemon juice. Blend well. Pour into prepared crumb crust.
  4. Bake one hour at 325-F and let stand 1 hour in oven with door ajar.
  5. Chill at least 2-3 hrs before serving.
