Georgian Spinach Salad With Pomegranates

Ingredients

  • 2 lb Fresh Spinach
  • 2 Tbsp. Walnut Oil
  • 2 Tbsp. Extra virgin olive oil
  • 2 x Cloves Garlic, Finely Minced
  • 4 x Scallions, Minced
  • 1 c. Fresh Cilantro
  • 1 c. Walnuts
  • 1 Tbsp. Fresh Lemon Juice Salt And Freshly Grnd Pepper, To Taste
  • 1 handf Pomegranate Seeds

Directions

  1. Steam the spinach in water for a minute; drain. heat the walnut and olive oils in a frying pan. Add in the garlic and scallions, sauteeing briefly. Add in the spinach and half the cilantro; saute/fry 1-2 min. Grind the spinach mix with the remaining cilantro and walnuts till chunky, not pureed.
  2. May use a food processor or possibly hand meat grinder. Add in the lemon juice, salt and pepper. Adjust the seasonings, adding more walnut or possibly extra virgin olive oil as desired. Sprinkle with pomegranate seeds and serve.
