Ingredients

  • Oatmeal Cake with Broiled Coconut Pecan Icing
  • 1 cup (75g) quick cooking oats
  • 1 – 1/2 cups (375ml) boiling water
  • 1 cup (110g) light brown sugar
  • 1 cup (175g) granulated sugar
  • 1/2 cup (113g) butter (room temperature) or vegetable shortening
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 – 1/2 cups (240g) flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons (85g) melted butter
  • 1/3 cup (80ml) half and half or whipping cream
  • 1 cup (110g) light brown sugar
  • 1 cup (100g) coarsely chopped pecans or walnuts
  • 1 cup (50g) sweetened or desiccated coconut*
