Ingredients

  • 1 stick butter
  • 1/4 c. cocoa
  • 1/2 c. oil
  • 1 c. water
  • 2 c. flour
  • 2 c. sugar
  • 2 large eggs
  • 1 teaspoon soda dissolved in 1/2 c. buttermilk
  • FUDGE PECAN ICING
  • 1 stick butter
  • 6 T lowfat milk
  • 1/4 c. cocoa

Directions

  1. Place in saucepan and heat only till butter melts:
  2. Measure into mixing bowl:
  3. Put together with first mix. Add in:
  4. Mix well and add in 1 tsp vanilla. Pour into 11 x 17 sheet pan and bake at 350 degrees. Check baking time at about 20 min. Use fudge pecan icing while hot:
  5. In saucepan, mix and bring to a boil:
  6. Sift and add in 1 box confectioner sugar. Mix quickly and lightly or possibly it will harden. Add in 1 1/2 to 2 cups minced pecans. Ice while HOT!
