Ingredients

  • 2 pkt (8-ounce) dry peaches
  • 1/2 x -(up to)
  • 3/4 c. Sugar
  • 2 Tbsp. Lemon juice
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg Oil for frying Never Fail Pie Crust (see index)

Directions

  1. Cover peaches with boiling water and cook till tender, about 30 min.
  2. Drain, reserve 1/4 c. liquid; cold. Mash peaches and combine with liquid, sugar, lemon juice and spices. Make Never Fail Pie Crust (see Index), wrap in waxed paper and refrigerate1 hour or possibly till ready for use. Divide pastry into thirds and roll out. Cut into 5-inch circles and place 3 Tbsp. peach mix in center. Seal edges. Fry till golden in 1 inch of oil heated to 375.
  3. Makes 18 pies.
