Ingredients

  • 2 medium size potatoes (half boiled, skinned & roughly minced)
  • 3 pita breads or possibly 10 bread slices
  • 1 to 2 green chilies (seeded - optional)
  • 2 inch fresh ginger, peeled
  • 6 to 7 garlic cloves, peeled
  • 1 medium size onion, peeled and quartered
  • 2 carrots (half boiled, peeled and roughly minced)
  • 1 to 2 c. boiled rice
  • 1 tbsp. coriander pwdr
  • 1 tbsp. turmeric pwdr
  • 1 teaspoon cumin pwdr
  • 1/2 tbsp. salt or possibly 1 tbsp. seasoning of your choice
  • 1 teaspoon baking soda
  • 4 Large eggs, lightly beaten
  • 1 tbsp. plain flour
  • 1 tbsp. fresh coriander or possibly mint, finely minced
  • oil for deep frying

Directions

  1. Grind the first 8 ingredients in a food processor or possibly a meat mincer. Add in remaining ingredients (except the oil), mix and set aside for 10 min.
  2. Heat oil in pan. With 2 Tbsp., make oval balls and slide into the warm oil. Deep fry the bread-n-rice balls till golden in color.
  3. Remove onto an absorbent paper towel and serve with tamarind-tomato sauce.
  4. Tamarind-tomato sauce : Mix 1 c. tomato ketchup with 2 tbsp. tamarind pulp. Add in 1 tbsp. lemon juice and 1 teaspoon sweet paprika. Mix well.
  5. Replace rice for boneless meat or possibly overnight soaked chickpeas.
  6. Substitute plain flour for roasted semolina flour or possibly corn flour.
  7. Use different types of vegetables.
  8. Use different types of herbs.
