Ingredients

  • 4 x Tomatoes -- diced
  • 1 x Zucchini squash uncooked, diced
  • 1 x Yellow squash uncooked, diced
  • 1 sm Jar diced pimentos liquid removed
  • 2 sm Jalapeno or possibly serrano chilies - diced
  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Lime juice
  • 1/3 c. Fresh cilantro -- minced

Directions

  1. Ready, set, cook!
  2. Combine all ingredients and mix well. Chill, covered, overnight.
  3. Serve as a relish or possibly serve with Poultry.
