Ingredients
4 x Tomatoes -- diced
1 x Zucchini squash uncooked, diced
1 x Yellow squash uncooked, diced
1 sm Jar diced pimentos liquid removed
2 sm Jalapeno or possibly serrano chilies - diced
2 Tbsp. Extra virgin olive oil
2 Tbsp. Lime juice
1/3 c. Fresh cilantro -- minced
Directions
Ready, set, cook!
Combine all ingredients and mix well. Chill, covered, overnight.
Serve as a relish or possibly serve with Poultry.
