Ingredients

  • 1/3 c. lowfat sour cream
  • 1/4 c. minced red onion
  • 3 Tbsp. minced cilantro
  • 1 tsp chopped canned chipotle chilies see * Note
  • 1 x ahi tuna steak - (8 ounce) cut into 3/4" pcs
  • 1 Tbsp. taco seasoning mix
  • 1 Tbsp. vegetable oil
  • 4 x taco shells

Directions

  1. Note: Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.
  2. Mix first 4 ingredients in small bowl. Place tuna in medium bowl; sprinkle with taco seasoning. Heat oil in heavy medium skillet over medium-high heat. Add in tuna; saute/fry to desired doneness, about 3 min for medium.
  3. Reduce heat to medium-low. Stir in lowfat sour cream mix. Cook just till heated through, stirring frequently, about 2 min (don't boil).
  4. Heat taco shells in microwave 20 seconds. Fill taco shells with tuna mix.
  5. This recipe yields 4 servings.
  6. Comments: Serve these tacos with salsa, shredded lettuce, sliced avocado and black olives. Corn and black bean salad finishes the meal-except for dessert. We recommend spice cake.
