Fresh Tomato, Spinach And Mushroom Pizza

Ingredients

  • 1/2 lb Spinach
  • 3 med Plum Tomatoes
  • 8 ounce Mushrooms
  • 1 Tbsp. Extra virgin olive oil
  • 10 ounce Refrigerated Pizza Crust, (Like Pillsbury)
  • 16 ounce Mozzarella Cheese, Shredded
  • 2 1/2 ounce French-Fried Onions, (Like Durkee)
  • 1/2 tsp Dry Oregano
  • 1/2 tsp Black Pepper

Directions

  1. Preheat oven to 425. Wash and thinly slice spinach leaves. Cut tomatoes into 1/4" thick slices; thinly slice mushrooms. In 10" skillet over medium heat, cook mushrooms in extra virgin olive oil till tender. On ungreased large cookie sheet, unroll pizza dough and press into 14 x 12" rectangle; sprinkle with 2 c. cheese over crust. Top with sliced spinach, tomatoes, and mushrooms.
  2. Sprinkle with onions, oregano, pepper and remaining cheese. Bake pizza on bottom rack in oven 12 min or possibly till crust is golden brown.
