FRESH TOMATO SOUP

I’m sure you will love this recipe. I’ve served it at many events I’ve catered and received raves. This can definitely be made a day or two ahead and then slowly reheated. I like to serve it with cornbread. I never particularly liked cornbread till I found a recipe I could modify to one that my family and I love. Time and again I’m asked for that recipe too.

Another fun idea is to pour in soup bowls and add a few popcorns to the bowl. I know sounds weird but I’ve received compliments.

Ingredients

  • FRESH TOMATO SOUP
  • 2 T. Margarine
  • 4 fresh tomatoes (chopped)
  • 2 T. honey or more depending on tomato sweetness
  • 2 C. Chicken Broth
  • 1 Large can Tomato Paste
  • ½ C. Onions, finely chopped

Directions

  1. Melt margarine; add chopped onions and sauté till tender. Add tomato paste, tomatoes and chicken broth to pot. Sauté till tomatoes are tender, taste and add honey. Depending on the fresh tomatoes you may need to add more than the 2 T. I suggested.
