%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EPrepare%20the%20piecrust%20according%20to%20package%20directions.%3C/p%3E%3Cp%3EIn%20a%20saucepan%20over%20high%20heat,%20combine%20the%20water,%20sugar,%20cornstarch,%20and%20lemon%20juice.%20Bring%20to%20a%20boil%20then%20reduce%20heat%20and%20stir%20about%204-5%20minutes,%20reaching%20a%20very%20slightly%20thickened%20consistency.%20Add%20lemon%20gelatin%20and%20stir%20until%20dissolved.%20Cool%20to%20room%20temperature.%20Add%20strawberries%20and%20mix%20thoroughly.%20Pour%20into%20the%20prepared%20piecrust%20and%20refrigerate%20for%204%20hours%20or%20until%20set.%3C/p%3E%3Cp%3EYou%20may%20not%20notice%20a%20thickening%20in%20the%20consistency%20while%20stirring,%20I%20didn%E2%80%99t.%20However,%20don%E2%80%99t%20worry%20stirring%20the%20full%205%20minutes%20is%20sufficient.%3C/p%3E%3Cp%3EStrawberry%20Lemon%20Jell-O%20Pie%20Assessment%3C/p%3E%3Cp%3EThe%20pie%20was%20bursting%20with%20that%20distinctive%20fresh%20strawberry%20flavor.%20Expecting%20a%20sweet%20lemon%20Jell-O%20undertone,%20I%20was%20pleasantly%20surprised%20to%20find%20the%20contrast%20of%20lemon%20completely%20enhanced%20the%20fresh%20strawberry%20flavor.%20The%20texture%20was%20delightful,%20in%20no%20way%20rubbery,%20and%20much%20lighter%20than%20traditional%20Jell-O.%20Not%20an%20excessively%20sweet%20pie,%20a%20dollop%20of%20whipped%20cream%20is%20the%20perfect%20finish.%3C/p%3E%3Cp%3EOther%20combinations%20of%20Jell-O%20I%E2%80%99ve%20tested%20were%20raspberry%20and%20strawberry.%20The%20strawberry%20was%20my%20least%20favorite%20as%20it%20overpowered%20the%20fresh%20strawberry%20flavor.%20The%20raspberry%20Jell-O%20and%20fresh%20strawberry%20combo%20needed%20something%20more.%20Perhaps%20a%20thin%20layer%20of%20kiwi%20is%20the%20answer%E2%80%A6.%20We%20will%20see%20next%20pie!%3C/p%3E%3Cp%3EAre%20you%20hungry?%3C/p%3E){kind=link}
