Ingredients

  • 1 c. Butter
  • 2 c. Sugar
  • 3 x Large eggs
  • 3 c. Flour
  • 1 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 2 tsp Vanilla
  • 3 c. MacIntosh apples, diced
  • 2 c. Walnuts, minced
  • 1 1/2 c. Sugar
  • 1/2 c. Sherry

Directions

  1. Cream butter and sugar well; add in Large eggs, one at a time, beating well after each addition; sift flour, soda, salt, cinnamon and nutmeg together; gradually add in to butter mix; stir in vanilla; mix in apples and walnuts; pour into a greased 10-inch tube pan and bake in a preheated, 325 oven for approximately 1 1/2 hrs; cold; drizzle sherry glaze over cake and serve. Sherry Glaze. Combine sugar and sherry in a heavy saucepan; cook, stirring constantly, till syrupy, about 2 min. Chuck in Pok.
