Ingredients

  • 2 c. French market soup mix
  • 2 quart Water
  • 1 x Ham hock
  • 1 1/4 Tbsp. Salt
  • 1/4 Tbsp. Pepper
  • 16 ounce Can whole tomatoes, coarsely minced, do not drain
  • 1 1/2 c. Minced onion
  • 1 x Clove garlic, chopped
  • 1 x Chili pepper, minced
  • 1/4 c. Lemon juice

Directions

  1. Sort and wasy 2 c. of the bean mix, place in a large heavy soup kettle.
  2. Cover with water which reaches 2 inches above the beans. Soak overnight. The following morning: Drain the beans, and add in 2 quart water, ham hock, salt and pepper. Cover and bring to a boil. Reduce the heat and simmer for 1 1/2 hrs till beans are tender. Add in remaining ingredients. Simmer for another 30 min, stirring occasionally. Remove ham hock from the soup, take the meat from the bone, chop and return to the soup.
  3. Makes 2 1/2 qts of soup
