Fish For Fish And Chips

Ingredients

  • 2 lb Hard-fleshed white fish fillets (cod, shark, halibut)
  • 1 1/2 c. Flour
  • 2 x Large eggs separated
  • 2 Tbsp. Cool beer (or possibly water)
  • 1/4 tsp Salt
  • 1/2 c. Lowfat milk

Directions

  1. Rinse fish in cool water, pat dry, set aside.
  2. In a food processor, combine flour, egg yolks, beer, salt, lowfat milk, and 1/4 c. cool water. Pulse several times to mix into a thin batter.
  3. Pour into bowl and cover with plastic wrap and let stand at room temperature for 30 min.
  4. Dip fish into batter and fry, in batches without crowding and turning frequently till brown and crisp (5-7 min).
  5. Drain on paper towels.
