Ingredients

  • 5 med Potatoes
  • 3 med Onions, minced
  • 3 Tbsp. Oil Salt, pepper, nutmeg, to taste
  • 1 lb Ricotta, farmers cheese or possibly homemade cheese
  • 2 Tbsp. Minced green onions Salt and pepper, to taste
  • 1 x Egg

Directions

  1. POTATO FILLING:
  2. Cook onions in oil till they are brown and crispy.
  3. Cook potatoes in their skins . Peel them as soon as they are cold sufficient to handle.
  4. Mash potatoes. Stir in onions and seasonings.
  5. CHEESE FILLING:
  6. Crumble cheese with a fork.
  7. Stir in rest of ingredients.
