Ingredients

  • 4 x Fillets whiting - trimmed
  • 4 x Streaky rashers, (bacon) - rind removed
  • 55 gm Butter 1 onion - finely minced
  • 55 gm Fine brown breadcrumbs
  • 1 tsp Minced parsley Fresh or possibly dry herbs of choice Pepper and salt

Directions

  1. Heat butter, add in onion, saute/fry gently and add in all remaining ingredients. Cut each fillet in half lengthwise. Place stuffing on each fillet, roll up and wrap a thin slice of streaky rasher (bacon) around each roll. Place in a buttered ovenproof dish, cover and bake in a moderate oven 190 C/375 F/Gas Mark 5 for 15 min. Remove cover to brown the dish for last five min. Substitutions Cod, haddock, pollock, hake.
