Ingredients

  • Prep Time: 30 Min
  • 4 x well-trimmed Beef ribeye or possibly boneless top loin steaks, 3/4" thick
  • 2 Tbsp. fresh lime juice
  • 8 med flour tortillas
  • 1/2 c. shredded Colby or possibly Monterey Jack cheese
  • 1 c. refrigerated salsa

Directions

  1. Place Beef steaks in utility dish.
  2. Sprinkle with half the lime juice. Turn steaks over and sprinkle with remaining lime juice.
  3. Wrap tortillas in heavy-duty aluminum foil.
  4. Place steaks on grill over medium, ash-covered coals. Grill ribeye steaks, uncovered, 6 to 8 min (top loin steaks 10 to 12 min) for medium-rare to medium doneness, turning occasionally.
  5. Place tortilla packet near edge of grill. Heat 5 min, turning once.
  6. Top each steak with equal amount of cheese.
  7. Serve with salsa and tortillas.
