Ethel's Sugar Cookies (With Variations)

Ingredients

  • 3/4 c. Butter, softened
  • 1 c. Sugar
  • 2 x Egg
  • 1/2 tsp Vanilla extract
  • 2 1/2 c. Flour, sifted
  • 1 tsp Baking pwdr
  • 1 tsp Salt Sugar, for dusting (opt)

Directions

  1. Thoroughly mix together the butter, sugar, Large eggs, and flavoring of choice.
  2. Sift together the flour, baking pwdr, and salt. Stir into the butter mix. Refrigeratefor at least 1 hour. Roll out to 1/8-inch thickness. cut into desired shapes with cookie cutter dipped in flour. Re-roll the scraps and continue cutting till all of the dough is used. Place on an ungreased baking sheet. Sprinkle with sugar, if you like. Bake in a moderate/warm
  3. (400F) oven till delicately golden brown, about 6 to 8 min.
  4. Makes about 4dozen 3-inch cookies.
  5. VARIATIONS
  6. Lemon Sugar Cookies: Follow the basic recipe above, except use 2 tsp. grated lemon rind and 1 tsp. lemon juice in place of the flavoring.
  7. Filled Sugar Cookies: Follow the basic recipe above except combine in pairs before baking with 1 Tbsp. filling of your choice or possibly a solid chocolate mint wafer between. Press the edges of the cookies together with the tines of a fork.
  8. Nut Sugar Cookies: Follow the basic recipe above except mix 1 c. of finely minced nuts into the dough.
