Ingredients

  • 5 tsp Grnd white pepper
  • 2 1/2 tsp Mace
  • 2 1/4 tsp Salt
  • 2 tsp Grnd ginger
  • 2 tsp Rubbed sage
  • 1/2 tsp Nutmeg
  • 2 1/2 lb Boneless lean pork shoulder or possibly loin cut in cubes or possibly stripes
  • 1 lb Fresh pork fat cut in cubes or possibly strips
  • 1 1/2 c. Dry bread crumbs
  • 1 1/4 c. Chicken broth
  • 3 1/2 tsp Banger seasoning

Directions

  1. Seasoning:makes 4 pounds
  2. Grind pork and fat together using fine hole disc of meat grinder. Add in Banger Seasoning. Mix well. Grind again. Force mix into casings and tie in 4-5 inch lengths.
  3. This mix will be too fine to create into patties. Bake or possibly sautee.
