- Makes one cake in a 9-inch tube or bundt pan (or six 1-cup mini cakes)
- Ingredients:
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 14 tablespoons unsalted butter
- 1 cup sugar
- 2 eggs
- 1 cup homemade eggnog
- 1 1/2 teaspoons vanilla extract
- - For the topping and center layer --
- 1 1/4 cups pecan, broken into pieces or finely chopped
- 3-4 tablespoons sugar
- 1 tablespoon ground cinnamon

.%20This%20eggnog%20coffee%20cake%20fits%20the%20bill,%20making%20it%20ideal%20not%20only%20for%20breakfast%20but%20also%20as%20an%20afternoon%20snack%20or%20a%20pretty%20after-dinner%20dessert.%3C/p%3E%3Cp%3E(Don't%20you%20just%20love%20versatility?)%3C/p%3E%3Cp%3EBut%20I'm%20highly%20recommending%20it%20for%20breakfast,%20especially%20your%20Christmas%20morning%20breakfast,%20which%20is%20rapidly%20approaching%20and%20deserves%20a%20pretty,%20delicious%20cake.%3C/p%3E%3Cp%3EAs%20you%20can%20see%20from%20the%20photos,%20I%20made%20mini%20coffee%20cakes,%20using%20a%20wicked%20cute%20mini%20bundt%20cake%20pan%20that%20made%20six%20individual%20cakes.%20But%20the%20recipe%20also%20makes%20one%20large%20cake,%20using%20a%209-inch%20bundt%20or%20plain%20tube%20pan.%3C/p%3E%3Cp%3EAnd%20if%20you%20prefer%20more%20of%20a%20streusel-like%20topping,%20chop%20the%20pecans%20finely,%20rather%20than%20leaving%20them%20in%20fairly%20large%20pieces,%20as%20I%20did,%20before%20you%20put%20the%20topping%20mixture%20in%20the%20pan.%20And%20--%20surprise!%20--%20it%20has%20a%20layer%20of%20that%20crunchy,%20cinnamon-sugar%20nut%20mixture%20in%20the%20center%20of%20the%20cake%20as%20well%20as%20on%20the%20top.%3C/p%3E%3Cp%3EDo%20you%20have%20a%20Christmas%20morning%20breakfast%20tradition%20or%20would%20you%20be%20willing%20to%20give%20this%20eggnog%20coffee%20cake%20a%20whirl?%20Leave%20a%20comment:%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EEggnog%20Coffee%20Cake%20(adapted%20from%20Berkeley%20Farms)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Combine%20the%20flour,%20baking%20powder%20and%20salt%20in%20a%20small%20bowl%20and%20set%20aside.%20In%20another%20small%20bowl,%20mix%20together%20the%20pecans,%20remaining%20sugar%20and%20cinnamon;%20set%20this%20aside%20as%20well.%3C/p%3E%3Cp%3EWith%20a%20mixer,%20cream%20the%20butter%20and%201%20cup%20sugar%20until%20fluffy.%20Beat%20in%20the%20eggs,%20eggnog%20and%20vanilla%20(be%20careful%20--%20it%20may%20splash).%20Add%20the%20flour%20mixture%20a%20little%20at%20a%20time%20and%20mix%20until%20combined.%20Place%20half%20of%20the%20topping%20mixture%20in%20the%20bottom%20of%20a%20greased%20bundt%20or%20tube%20pan%20(or%20mini%20pans,%20if%20you're%20using%20them).%20Spoon%20half%20of%20the%20batter%20over%20that%20layer,%20then%20add%20the%20remaining%20topping%20mixture%20on%20top%20of%20the%20batter.%20Spoon%20in%20the%20remaining%20batter.%3C/p%3E%3Cp%3EBake%20about%2050%20minutes%20to%20one%20hour%20(start%20checking%20at%2050)%20or%20until%20a%20cake%20tester%20inserted%20near%20the%20center%20comes%20out%20clean%20(for%20mini%20cakes,%20start%20checking%20at%20about%2035%20minutes%20--%20they%20will%20take%20less%20time%20to%20bake).%20As%20with%20all%20bundt%20cakes,%20cool%20in%20the%20pan%20for%2010-15%20minutes%20before%20unmolding,%20then%20cool%20completely.%3C/p%3E){kind=link}
