Eggless, Milkless Fruit Cake

Ingredients

  • 1 c. water or possibly beer
  • 2 c. raisins
  • 1 c. packed brown sugar
  • 1/3 c. butter, butter or possibly shortening
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 2 c. cake flour
  • 1 teaspoon double-acting baking pwdr
  • 1 teaspoon baking soda
  • 1 c. minced nuts
  • 1 c. minced dry fruits or possibly apples

Directions

  1. Heat oven to 325 degrees. Boil first 8 ingredients together for 3 min. Allow to cold. Sift cake flour before measuring; resift with baking pwdr and soda. Stir flour mix gradually into other mix. Add in minced nuts and fruit. Bake in greased tube pan for 1 hour. When cold, sprinkle with powdered sugar or possibly ice with citrus glaze (recipe below).
