- Topping
- 1 pint (2 cups) whipping cream
- 1/3 cup powdered sugar

%20goes%20bad.%20%20Hence%20here%20we%20are%20at%20lemon%20pie.%3C/p%3E%3Cp%3EThis%20recipe%20is%20based%20off%20of%20our%20super%20popular%20Banana%20Cream%20Pie%20(which%20is%20a%20very%20old%20post%20with%20very%20old%20photos,%20but%20awesomely%20delicious.)%20%20%20I%20was%20craving%20some%20sort%20of%20lemon%20cream%20pie%20but%20didn%E2%80%99t%20have%20the%20time%20nor%20energy%20to%20make%20a%20traditional%20egg-based%20custard.%20%20My%20mind%20immediately%20went%20to%20our%20beloved%20banana%20cream%20pie%20and%20I%20wondered%20if%20the%20same%20recipe%20could%20be%20tweaked%20for%20lemon.%20%20Sure%20enough,%20it%20was%20a%20home%20run.%20%20(Insert%20fist-pump,%20here.)%3C/p%3E%3Cp%3EYou%20only%20need%20a%20few%20ingredients%20here.%20%20I%20started%20with%20a%20basic%20graham%20cracker%20crust.%3C/p%3E%3Cp%3EI%20know%20at%20least%20one%20person%20will%20ask%20about%20that%20pie%20plate,%20so%20here%E2%80%99s%20a%20link!%20%20Kate%20shared%20it%20once%20upon%20a%20time%20and%20I%20promptly%20bought%20one%20for%20myself.%20%20It%20comes%20in%20a%20million%20colors%20and%20is%20only%20about%20$18%20bucks.%20%20Win.%3C/p%3E%3Cp%3EYou%20can%20do%20a%20baked%20or%20unbaked%20crust%20for%20this%20pie.%20%20I%20baked%20mine,%20which%20makes%20it%20a%20little%20crispier,%20but%20I%20really%20love%20soft%20graham%20cracker%20crusts%20as%20well.%3C/p%3E%3Cp%3EThe%20ingredient%20list%20couldn%E2%80%99t%20be%20more%20simple.%20%20We%E2%80%99re%20using%20a%20boxed%20pudding%20mix,%20but%20no%20worries,%20we%E2%80%99re%20not%20going%20to%20just%20make%20lemon%20flavored%20pudding.%20%20You%E2%80%99ll%20be%20using%20cream,%20sweetened%20condensed%20milk,%20and%20fresh%20lemons%20for%20amazing%20flavor.%20%20The%20pudding%20adds%20a%20beautiful%20creaminess%20(without%20eggs)%20and%20provides%20stability.%20%20%20Don%E2%80%99t%20use%20lemon%20pudding,%20because%20we%20don%E2%80%99t%20want%20that%20artificial%20flavor%20in%20there,%20just%20go%20for%20the%20vanilla%20and%20we%E2%80%99ll%20get%20all%20of%20the%20lemon%20flavor%20from%20actual%20lemons.%3C/p%3E%3Cp%3EUse%20electric%20beaters%20to%20mix%20up%20the%20pudding,%20lemon%20juice,%20sweetened%20condensed%20milk,%20and%20a%20little%20regular%20milk%20as%20well.%20%20I%20also%20include%20some%20of%20the%20zest.%20%20Then%20you%E2%80%99ll%20fold%20in%20whipped%20cream.%20%20Don%E2%80%99t%20stir,%20fold%20fold%20fold.%3C/p%3E%3Cp%3ESpread%20that%20mixture%20into%20your%20pie%20crust.%20%20Now%20you%20might%20notice%20that%20this%20same%20mixture%20in%20the%20Banana%20recipe%20makes%202%20pies,%20however%20in%20that%20version,%20you%E2%80%99ve%20got%20a%20bunch%20of%20space%20taken%20up%20by%20the%20bananas.%20%20I%E2%80%99ve%20found%20if%20you%20do%202%20pies%20here,%20they%E2%80%99re%20pretty%20shallow,%20so%20I%20prefer%20to%20make%20just%20one%20tall,%20full%20pie.%20%20You%E2%80%99ll%20have%20more%20than%20enough%20filling%20than%20you%20need,%20so%20it%E2%80%99s%20the%20perfect%20amount%20to%20stow%20away%20a%20little%20bowl%20for%20yourself%20to%20eat%20while%20hiding%20in%20the%20closet.%20%20Or%20wherever.%3C/p%3E%3Cp%3ESpread%20out%20the%20mixture%20evenly%20and%20refrigerate%20the%20pie.%20%20It%E2%80%99s%20important%20it%20has%20plenty%20of%20time%20to%20chill%20(like%204-6%20hours%20at%20least)%20so%20it%20firms%20up%20enough%20to%20slice.%3C/p%3E%3Cp%3EBefore%20you%20serve%20it,%20top%20it%20with%20whipped%20cream%20(again,%20you%E2%80%99ll%20have%20a%20very%20generous%20amount%20of%20whipped%20cream,%20so%20just%20use%20some%20for%20that%20closet%20binging%20sesh%20we%20discussed%20earlier)%20and%20if%20you%20want,%20those%20candied%20lemon%20slices%20I%20showed%20you%20how%20to%20make%20a%20few%20weeks%20ago.%3C/p%3E%3Cp%3EThis%20pie%20is%20super%20sweet,%20yet%20super%20tart,%20so%20a%20little%20goes%20a%20long%20way!%20%20It%20would%20feed%208%20people%20minimum,%20and%20really%20more%20like%2010-12%20because%20you%20can%20get%20away%20with%20smaller%20slices.%3C/p%3E%3Cp%3EIt%20would%20be%20perfectly%20beautiful%20on%20a%20Mother%E2%80%99s%20Day%20table%20if%20you%20ask%20me.%3C/p%3E%3Cp%3EOh,%20and%20can%20we%20just%20talk%20about%20that%20plate%20for%20a%20quick%20minute?%20%20It%20was%20one%20of%20my%20most%20favorite%20plates%20(I%20have%20hundreds,%20for%20food%20styling)%20and%20I%20totally%20dropped%20it%20after%20this%20shoot%20and%20broke%20it%20and%20my%20heart%20crumbled%20into%20a%20million%20pieces%20so%20I%20ate%20the%20whole%20pie%20to%20cope.%20%20Seriously%20though.%20%20It%20was%20from%20Anthropologie,%20does%20anyone%20have%20them%20and%20know%20what%20the%20name%20of%20the%20pattern%20is%20so%20I%20can%20see%20if%20I%20can%20find%20them%20anywhere?%20%20Anyone%20know%20where%20I%20can%20find%20them?%20%20I%20would%20buy%20a%20whole%20set%20if%20I%20could%20find%20them%20because%20I%20love%20them%20so%20much.%20%20Help%20a%20girl%20out!%3C/p%3E%3Cp%3EEasy%20Lemon%20Cream%20Pie%3C/p%3E%3Cp%3ERecipe%20from%20Our%20Best%20Bites%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3ECrust%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ETo%20prepare%20graham%20cracker%20crust,%20combine%20cracker%20crumbs%20and%20sugar.%20%20Pour%20in%20melted%20butter%20and%20stir%20with%20a%20fork%20until%20well%20blended.%20%20Press%20into%20a%20standard%20pie%20plate%20and%20up%20sides.%20%20You%20may%20refrigerate%20unbaked%20for%20a%20softer%20crust,%20or%20bake%20at%20375%20degrees%20for%205-6%20minutes%20for%20a%20crispier%20crust.%20%20Cool%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20pudding%20mix,%20lemon%20zest,%20lemon%20juice,%20milk,%20and%20sweetened%20condensed%20milk.%20%20Beat%20well%20with%20electric%20beaters%20and%20place%20in%20the%20fridge%20to%20chill%20for%20a%20few%20minutes.%20%20In%20a%20separate%20bowl,%20whip%201%20cup%20of%20the%20whipping%20cream%20until%20medium-stiff%20peaks%20form.%20%20Remove%20pudding%20from%20the%20fridge%20and%20gently%20dollop%201/3%20of%20the%20whipped%20cream%20on%20top%20of%20the%20pudding%20and%20gently%20stir%20in.%20%20Dollop%20the%20additional%20whipped%20cream,%20in%20large%20spoonfuls,%20onto%20the%20pudding%20mixture%20and%20gently%20fold%20the%20cream%20into%20the%20pudding%20mixture%20until%20well-combined.%3C/p%3E%3Cp%3EPour%20the%20mixture%20into%20your%20prepared%20graham%20cracker%20crust.%20%20(There%20will%20be%20plenty%20for%20a%20full%20pie,%20so%20feel%20free%20to%20save%20a%20mini%20bowl%20for%20the%20cook%20to%20eat!).%20%20Cover%20with%20plastic%20and%20place%20in%20the%20fridge%20to%20chill%20for%204-6%20hours,%20or%20overnight.%3C/p%3E%3Cp%3EBefore%20serving,%20whip%20the%20remaining%201%20cup%20cream%20with%20powdered%20sugar%20and%20vanilla%20until%20medium%20peaks%20form.%20%20Spread%20on%20top%20of%20pie%20(again,%20there%20is%20a%20generous%20amount,%20so%20use%20a%20little%20to%20top%20your%20secret%20serving%20you%20saved.%20%20You%20deserve%20it,%20you%20made%20a%20pie).%20%20Garnish%20with%20candied%20lemon%20slices%20and%20crushed%20graham%20crackers%20if%20desired.%3C/p%3E){kind=link}
