Easy Individual Cheesecakes Recipe

Ingredients

14 vanilla wafers 4 (3 ounce.) Packages cream cheese, softened 2/3 c. sugar 2 Large eggs

1 teaspoon vanilla extract 3/4 c. commercial lowfat sour cream 1/4 c. sugar 1 can strawberry canned pie filling

Directions

1. Line muffin pans with paper liners. Place a vanilla wafer in each c.. Set pans aside. Beat cream cheese with electric mixer till light and fluffy; gradually add in 2/3 c. sugar and mix well. Add in Large eggs and vanilla, beating well.
2. Spoon mix into liners filling 2/3 full. Bake at 350 degrees for 10 min. Cold.
