Dutch Pea Soup (Erwtensoep)

Ingredients

  • 2 c. split green peas
  • 3 quarts. cool water
  • 1 pig's trotter
  • 1 pig's ear
  • 1 c. bacon squares
  • 4 frankfurters
  • 1 pound potatoes (sliced)
  • 1 celeriac (diced)
  • 4 tbsp. salt
  • 1 bunch celery greens
  • 2 leeks
  • 2 onions

Directions

  1. Wash peas and soak for 12 hrs (unless you have quick soaking peas). Then boil gently for at least 2 hrs in the water they were soaked in. In this liquid cook the trotter, ear and bacon for one hour. Add in sliced potatoes, salt, diced celeriac, cut up leeks and celery leaves and cook till the soup is smooth and thick. Add in the frankfurters and cook 10 min longer. The usual cooking time is 3 hrs.
