Ingredients

  • 3 c. sugar
  • 1 1/2 c. Crisco
  • 7 large eggs
  • 3 c. plain flour
  • 1/2 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 1 c. buttermilk
  • 2 teaspoon vanilla flavoring
  • 1 (1 ounce) bottle red cake coloring
  • 1 (8 ounce) pkg. cream cheese
  • 1/2 stick butter
  • 1 teaspoon vanilla
  • Maraschino cherries, minced fine
  • 1/2 to 1 c. minced pecans
  • 1 box powdered sugar

Directions

  1. Cream sugar and Crisco. Add in large eggs, one at a time. Mix flour, baking pwdr, salt. Add in flour and lowfat milk alternately beginning and ending with flour. Add in flavoring and cake coloring. Beat till well blended. Pour in well-greased and lightly floured tube pan. Bake at 325 degrees for 1 1/2 hrs. Frost when cool.
  2. Cream butter and cream cheese. Add in powdered sugar, cherries, vanilla, and pecans. Beat till smooth. Spread on cake.
