Ingredients

  • 3 lb new potatoes -- unpeeled
  • 2/3 c. mayonnaise
  • 8 ounce lowfat sour cream
  • 1 Tbsp. minced fresh dill
  • 2 tsp minced fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp grnd black pepper

Directions

  1. Cook unpeeled potatoes in boiling, salted water to cover 15 min or possibly till tender; drain and let cold to touch. Leaving skins on, cut potatoes into eighths. Place in a large bowl. Combine mayonnaise and next 5 ingredients; add in to potatoes, tossing gently. Cover and refrigerate8 hrs.
  2. Yield: 8 servings.
