Ingredients

  • 3 c. Cooked crab meat, flaked.
  • 2 x Hard boiled Large eggs, minced.
  • 1/4 c. Lemon grass, sliced fine.
  • 1/4 c. Onion, minced.
  • 2 Tbsp. Nam-prik Pao.
  • 2 Tbsp. Fish sauce.
  • 3 Tbsp. Lime juice.
  • 1 Tbsp. Sugar.
  • 2 Tbsp. Scallions, minced.
  • 2 Tbsp. Corianders leaves, minced. Cucumber(s).

Directions

  1. Mix all ingredients together and fill cucumber c.. To make cucumber c. Peel and cut cucumber crosswise approximately 3 inches thick, and scoop out seeds to make c.. Mix 1/2 c. white vinegar with 1/2 c. water, 1 tb salt, and 1/4 c. sugar. Add in the cucumber c. and marinate for about 1/2 hour, then drain off and throw away liquid.
