Ingredients

  • 1 tablespoon olive oil
  • 1 cup Israeli couscous
  • 1 1/2 cups water
  • 1/3 - 1/2 cup dried fruit (I used cranberries, cherries and apricots)
  • 3/4 teaspoon salt
  • Zest and juice of one lemon (you will need 1 tablespoon of juice)
  • 1 cup cooked chicken (optional)
  • 3 tablespoons sliced green onion
