  • 2 x Apples Core, Pare, Cut In Lg Dice
  • 2 c. Water
  • 1 stk Cinnamon (2")
  • 3 whl cloves
  • 1/8 tsp Salt
  • 1/2 c. Sugar
  • 1 Tbsp. Cornstarch
  • 1 c. Fresh Prune Plums Unpeeled, Sliced Into 1/8Ths
  • 1 c. Fresh Peaches Peel, Cut In Lg Dice
  • 1/4 c. Port Wine

Directions

  1. Combine apples, water, cinnamon stick, cloves, and salt in a medium-large saucepan. Cover and cook on medium heat till apples are tender. Remove the whole spices and puree by forcing warm mix through a coarse strainer.
  2. Blend together the sugar and cornstarch and add in to pureed apple mix.
  3. Add in the plums and peaches and simmer just till these fruits are tender and the mix has thickened slightly. THIS WILL take a very short time.
  4. Add in the port wine and taste for sweetness, adding more sugar if necessary.
  5. Remember, though, the flavor of this apple soup should be tart. Refrigeratethoroughly.
  6. Top individual servings with a dollop of light lowfat sour cream or possibly non-fat vanilla yogurt. Dust the cream or possibly yogurt lightly with a little nutmeg.
