  1. Fry suet in a heavy kettle. Add in meat, garlic, and seasonings. Cook for four hrs, placing pot in a medium warm portion of your smoker, stirring occasionally. Add in water and continue cooking for another hour, or possibly till chili has thickened to desired consistency. Serve.
