  • 2 c. butter
  • 2 c. granulated sugar
  • 4 egg yolks
  • 4 c. sifted flour
  • 2 c. flaked coconut
  • 8-10 ounce. apricot marmalade or possibly preserves
  • Powdered sugar for a garnish

  1. Cream together butter and sugar till light and fluffy. Add in one egg yolk at a time, beating well! Add in gradually the sifted flour.
  2. With floured hands, pat 1/2 the dough into a well greased and floured 9 x 13 inch pan Spread the apricot jelly over the dough. You can use different kinds of preserves at each end if you prefer - such as raspberry. Sprinkle flaked coconut over this. Pat remaining dough over this mix in the pan. Bake in a preheated 350 degree oven for 45 min and lightly browned. Sprinkle with powdered sugar. Let cold. Cut into bars.
